So many of my readers ask what farmer's cheese is and where can they get it. Farmer's cheese is a dry curd cheese that's fresh or unaged. It is the most common Slavic cheese and is used in countless recipes like cheesecakes, strudels, nalesniki (crepe) and pierogi fillings and in savory dishes. Farmer's cheese is known as twaróg in Polish, surutka in Croatian and Serbian, tvaroh in Czech and Slovak, aludttej in Hungarian, varskes in Lithuanian, lapte covasit in Romanian, tvorog in Russian, skuta in Slovenian, and syr in Ukrainian.
